The installation(s)shall be compliant with NFPA 96,2008 edition. 2. Hoods shall extend 6"to the sides past the appliances. 3. Charbroiler shall have a 48"clearance from the bottom of the filters to the top of the charbroiler. 4. All rooftop exhaust fans shall be hinged and have grease containment cups. 5. Stainless steel shall be installed on the wall behind the appliances extending from the bottom of the hood to the floor. 6. All duct shall be 16 MSG carbon steel or 18 MSG stainless steel. 7. The VSP hood system is considered solid fuel cooking. In speaking with the manufacturer the hood is a Type 1 hood with grease filters and liquid tight hood/duct.Wood is placed and burned inside this unit for the purpose of flavoring the meat. Therefore baffle filters shall be spark arrestors. Filters must also be 48" above the appliance. (Chapter 14,NFPA 96)This system must also be protected with hood suppression. 2 * tions required: .
