Refer to <br />.. Section IV, DESIGN, starting on Page 4-10, for maximum fryer <br />nozzle coverages and maximum fryer nozzle height limitations. <br /> <br />Although the maximum 6 sq. ft. total surface cooking area require- <br />ment applies to fryer protection, it does not apply to tilt skillets or <br />braising pans. <br /> <br />Each tilt skilletlbraising pan protected module must not exceed the <br />fryer limitations for "MAXIMUM SIZE MODULE OVERALL WITH <br />DRIPBOARD" coverage per nozzle as described in Table on Page <br />.. 4-11. <br /> <br />Tilt skillets and braising pans generally utilize a hinged cover. <br />Fryer protection nozzles are to be placed toward the front of the <br />appliance to minimize the potential for the tilt skillet or braising pan <br />.. cover to interfere with the nozzle discharge.
